Mini Meatloaves with Balsamic Glaze

Ingredients

The meatloaves

  • 2 pounds ground beef
  • 2 large eggs
  • ½ cup onion, finely chopped
  • ½ cup panko breadcrumbs
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon salt
  • 1 teaspoon black pepper

The glaze

  • ½ cup ketchup
  • 3 tablespoons balsamic vinegar

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet with parchment paper or aluminum foil.
  2. Mix ketchup and balsamic vinegar in a small bowl.
  3. In a large bowl, combine ground beef, eggs, onion, panko, garlic, parsley, salt, and pepper, and mix well.
  4. Divide the mixture into 6 portions and shape them into 1-inch tall loaves.
  5. Place the loaves on the prepared baking sheet and brush with the ketchup mixture.
  6. Bake for about 25 minutes until the internal temperature reaches 160°F.
  7. Garnish with additional parsley before serving.
