Margarita Shrimp Skewers

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 Tbsp fresh lime juice
  • ½ tsp fresh lime zest
  • 1 Tbsp olive oil
  • 2 tsp tequila
  • 3 cloves garlic, minced
  • 3 Tbsp fresh cilantro, chopped
  • ¼ tsp salt
  • a pinch cayenne pepper
  • 12 pieces bamboo skewers, soaked

Instructions

  1. Soak the bamboo skewers in cold water for about 20 minutes and set aside.
  2. Whisk together lime juice, lime zest, olive oil, tequila, garlic, cilantro, salt, and cayenne pepper in a bowl.
  3. Place the peeled shrimp in a large ziplock bag and pour the marinade over the shrimp, shaking to combine.
  4. Allow the shrimp to marinate in the fridge for at least 30 minutes or up to 4 hours.
  5. Preheat the grill on medium-high heat and lightly spray it with oil to prevent sticking.
  6. Thread the marinated shrimp onto the bamboo skewers and discard the marinade.
  7. Place the skewers on the grill and cook until the shrimp turns pink, about 2 to 3 minutes on each side.
  8. Serve and enjoy!
