Ingredients

The batter

  • 1 cup all-purpose flour

  • 1 cup water
  • 2 tablespoons melted coconut oil or melted butter
  • 1 teaspoon vanilla extract

Toppings (optional)

  • to taste maple syrup

  • to taste butter
  • to taste sliced strawberries

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  2. In a separate bowl, combine the egg, water, oil, and vanilla extract.
  3. Add the dry ingredients to the wet ingredients and mix until smooth, letting the batter sit for 15-20 minutes if possible.
  4. Preheat a non-stick pan or griddle over medium-high heat.
  5. Pour approximately ¼ cup of batter onto the griddle for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve hot with your choice of toppings.
