The batter

Instructions
- In a large bowl, mix all the dry ingredients together.
- Add the wet ingredients to the dry mixture and whisk until combined, then let the batter sit for 5 minutes.
- Heat a skillet over medium heat and add oil.
- Pour ¼ cup of batter onto the skillet, cover, and cook for 2-3 minutes until bubbles form.
- Flip the pancake and cook until done, then repeat with the remaining batter.
