Ingredients

The dough

  • 4 packets active dry yeast
  • cups warm water
  • 4 cups bread flour
  • 1 tablespoon salt
  • ¼ cup granulated sugar
  • 2 tablespoons dry milk powder
  • 4 tablespoons butter, softened
  • 1 large egg

The egg wash

  • 1 whole egg
  • 1 tablespoon water

Instructions

  1. Bloom the yeast in warm water for 5 minutes.
  2. In a stand mixer, combine flour, salt, sugar, dry milk powder, butter, and egg, then slowly drizzle in the yeast mixture.
  3. Mix on medium speed until the dough is shiny and smooth, about 10 minutes.
  4. Shape the dough into a ball and place it in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
  5. Punch down the dough and let it rest. Divide it into 32 equal portions and shape into balls.
  6. Place the balls on baking sheets, cover, and proof until doubled in size, about 30 minutes.
  7. Preheat the oven to 400°F and brush the tops with egg wash.
  8. Bake until golden brown, about 18-20 minutes, rotating halfway through.
