Ingredients

  • 4 cups Bob’s Red Mill Gluten-Free Rolled Oats
  • 1 cup slivered almonds or nuts of choice
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon fine-grain sea salt
  • ½ teaspoon ground ginger
  • ½ cup melted coconut oil
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup large, unsweetened coconut flakes
  • ½ cup unsweetened shredded coconut
  • cup dried fruit (optional, chopped if large)

Instructions

  1. 1. Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  2. 2. In a large bowl, combine the oats, almonds, cinnamon, salt, and ginger.
  3. 3. Add the coconut oil, maple syrup, and vanilla to the dry ingredients and mix until well combined.
  4. 4. Spread the mixture evenly onto the prepared baking sheet.
  5. 5. Bake for 15 minutes, then stir in the coconut flakes and shredded coconut.
  6. 6. Return to the oven and bake for an additional 5 to 10 minutes until the coconut is lightly golden.
  7. 7. Allow the granola to cool completely on the pan before storing it in an airtight container.
