Triple Coconut Granola

Instructions
- 1. Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- 2. In a large bowl, combine the oats, almonds, cinnamon, salt, and ginger.
- 3. Add the coconut oil, maple syrup, and vanilla to the dry ingredients and mix until well combined.
- 4. Spread the mixture evenly onto the prepared baking sheet.
- 5. Bake for 15 minutes, then stir in the coconut flakes and shredded coconut.
- 6. Return to the oven and bake for an additional 5 to 10 minutes until the coconut is lightly golden.
- 7. Allow the granola to cool completely on the pan before storing it in an airtight container.
