Maple Rosemary Grilled Pork Chops

Ingredients

The pork chops

  • 6 pork chops, ½" thick, trimmed of excess fat

The marinade

  • 2 green onions, chopped
  • 2 tbsp finely chopped fresh rosemary
  • ½ cup pure maple syrup
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • ½ tsp ground black pepper

Instructions

  1. Place the pork chops in a non-reactive container.
  2. In a large glass measuring cup, combine all marinade ingredients and stir well.
  3. Pour the marinade over the pork chops and ensure they are completely coated.
  4. Cover the container with plastic wrap and refrigerate for at least 24 hours, up to 48 hours.
  5. Preheat the grill to high heat, about 600°F.
  6. Remove the chops from the marinade and place them on the hot grill without closing the lid.
  7. Grill for 2 to 3 minutes, then turn the chops a quarter turn and grill for another 2 minutes.
  8. Flip the chops and grill for another 5 minutes, turning a quarter turn after 2 to 3 minutes.
  9. Transfer the cooked pork chops to a plate and garnish with fresh rosemary and grape tomatoes, if desired.
