Instructions
- Preheat the oven to 425°F.
- Scrub and cut the sweet potatoes into desired shapes, ensuring even thickness.
- In a large bowl, mix the sweet potatoes with potato starch until well combined, then shake off excess starch.
- Add oil to the potatoes and toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet, using two sheets if necessary.
- Bake for 25-35 minutes, flipping every 15 minutes until browned and crispy.
- Allow to cool slightly before serving.
