Instructions
- Whisk together the mashed banana and peanut butter until smooth.
- Stir in the eggs until evenly combined.
- Add the maple syrup, chia seeds, vanilla, and cinnamon, and mix well.
- Sprinkle the baking soda and oat flour over the mixture and fold to combine.
- Fold in the pepitas, cranberries, and raisins.
- Chill the mixture for at least 4 hours or overnight.
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Spoon ¼ cup portions of the batter onto the baking sheet.
- Bake for 12 to 14 minutes until the cookies are dry and set.
- Let cool on the pan for 10 minutes before transferring to a wire rack.
