Ingredients

Wet Ingredients

  • ¾ cup mashed banana
  • ½ cup peanut butter
  • 2 large eggs
  • 2 tablespoons pure maple syrup
  • 2 tablespoons chia seeds
  • teaspoons pure vanilla extract
  • ½ teaspoon ground cinnamon

Dry Ingredients

  • 1 teaspoon baking soda
  • ¾ cup oat flour

Mix-Ins

  • ½ cup toasted pepitas
  • ¼ cup reduced-sugar dried cranberries
  • ¼ cup raisins

Instructions

  1. Whisk together the mashed banana and peanut butter until smooth.
  2. Stir in the eggs until evenly combined.
  3. Add the maple syrup, chia seeds, vanilla, and cinnamon, and mix well.
  4. Sprinkle the baking soda and oat flour over the mixture and fold to combine.
  5. Fold in the pepitas, cranberries, and raisins.
  6. Chill the mixture for at least 4 hours or overnight.
  7. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  8. Spoon ¼ cup portions of the batter onto the baking sheet.
  9. Bake for 12 to 14 minutes until the cookies are dry and set.
  10. Let cool on the pan for 10 minutes before transferring to a wire rack.
