Ingredients

The Sweet Potatoes

  • 1 large sweet potato
  • 1 Tbsp coconut or avocado oil

The Sweet Topping

  • 2 Tbsp Vegan Nutella or almond butter
  • ½ medium banana
  • ¼ cup berries
  • 1 pinch ground cinnamon
  • 1 Tbsp unsweetened shredded coconut
  • 1 pinch sea salt

The Savory Topping

  • 1 medium ripe avocado
  • 2 Tbsp nutritional yeast
  • 1 pinch sea salt
  • 2 tsp hemp seeds
  • 1 pinch red pepper flake

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Rub the sweet potato with a bit of oil and place it face down on the baking sheet.
  3. Bake for 25-28 minutes or until tender.
  4. Once baked, turn the sweet potato face up and place on a serving plate.
  5. For the sweet version, top with nut butter, banana, berries, cinnamon, salt, and coconut.
  6. For the savory version, top with avocado, nutritional yeast, salt, hemp seeds, and red pepper flake.
