Ingredients

Pesto Naan Pizzas

  • 2 large naan breads
  • 1 tablespoon olive oil
  • 2 large eggs
  • 4 tablespoons pesto
  • ½ cup shredded mozzarella cheese
  • ¼ cup sun-dried tomatoes
  • ¼ medium red onion
  • 1 cup fresh arugula
  • 1 teaspoon red pepper flakes
  • 4 leaves fresh basil
  • to taste salt
  • to taste pepper

Sausage Breakfast Naan Pizzas

  • 2 large naan breads
  • 1 tablespoon olive oil
  • 2 large eggs
  • ¼ cup cherry tomatoes
  • 1 cup shredded cheddar cheese
  • ¼ medium red onion
  • 2 large chicken breakfast sausage links
  • 2 tablespoons Greek yogurt
  • 1 tablespoon hot sauce
  • 2 tablespoons fresh parsley
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400ºF and bake the naan for 10 minutes until golden brown.
  2. For the pesto naan, heat olive oil in a skillet, crack in eggs, and cook until almost over easy.
  3. Spread pesto on each naan, top with mozzarella, sun-dried tomatoes, and onion.
  4. Add a fried egg on top and bake for an additional 5 minutes until cheese melts.
  5. Remove from oven and top with arugula, red pepper flakes, and basil.
  6. For the sausage naan, heat olive oil in a skillet, whisk eggs, and scramble them until slightly wet.
  7. Spread smashed cherry tomatoes on each naan, then add cheddar, onion, and sliced sausage.
  8. Top with scrambled eggs and bake for 5 minutes until cheese melts.
  9. Mix Greek yogurt and hot sauce, then drizzle over the pizza and sprinkle with parsley.
