Grilled Chicken with Cucumber-Melon Salsa

Ingredients

The chicken

  • 1 pound boneless skinless chicken breasts
  • ½ cup juice of limes (about 4 limes)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon garlic, minced (about 2-3 cloves)
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper, freshly ground

The salsa

  • cup honeydew melon, cut into ¼" cubes
  • cup cantaloupe, cut into ¼" cubes
  • cup cucumber, peeled, seeded, diced
  • cup red onion, diced
  • ½ large jalapeno, seeded and diced
  • 3 tablespoons fresh mint leaves, finely chopped
  • 1 teaspoon sugar or honey, or agave
  • 1 each zest of lime
  • 1 each juice of lime
  • to taste kosher salt and freshly ground black pepper

Instructions

  1. Rinse the chicken and place it in a large zip-top bag.
  2. Whisk together the remaining chicken ingredients and pour over the chicken. Marinate for at least 4 hours, up to 24 hours.
  3. An hour before serving, combine the salsa ingredients in a mixing bowl.
  4. Preheat a grill to medium heat.
  5. Cook the chicken over medium flame for about 7 minutes per side.
  6. Remove from the grill and let it stand for 5 minutes before serving. Top with salsa.
