Grilled Chicken with Cucumber-Melon Salsa

The chicken

juice of limes (about 4 limes)

red wine vinegar

garlic, minced (about 2-3 cloves)

extra-virgin olive oil

The salsa

⅔
cup
honeydew melon, cut into ¼" cubes

⅔
cup
cantaloupe, cut into ¼" cubes

⅓
cup
cucumber, peeled, seeded, diced

⅓
cup
red onion, diced

large
jalapeno, seeded and diced

tablespoons
fresh mint leaves, finely chopped

sugar or honey, or agave

zest of lime

juice of lime

kosher salt and freshly ground black pepper
Instructions
- Rinse the chicken and place it in a large zip-top bag.
- Whisk together the remaining chicken ingredients and pour over the chicken. Marinate for at least 4 hours, up to 24 hours.
- An hour before serving, combine the salsa ingredients in a mixing bowl.
- Preheat a grill to medium heat.
- Cook the chicken over medium flame for about 7 minutes per side.
- Remove from the grill and let it stand for 5 minutes before serving. Top with salsa.
