Ingredients

Cheesecake Bites

  • 16 oz Cream cheese (softened)
  • 1 large Egg (at room temperature)
  • 1 tsp Lemon juice
  • ½ tsp Vanilla extract
  • ½ cup Besti Powdered Monk Fruit Allulose Blend

Raspberry Swirl

  • 4 oz Raspberries
  • tbsp Water
  • 4 tsp Besti Powdered Monk Fruit Allulose Blend

Optional Toppings

  • 24 pieces Raspberries
  • to taste Sugar-free whipped cream (unsweetened or with sugar-free sweetener)

Instructions

  1. Preheat the oven to 350°F (177°C) and line a mini muffin pan with 24 parchment liners.
  2. In a small saucepan, heat raspberries, water, and powdered sweetener over low heat until the raspberries soften, then mash and simmer until thickened.
  3. In a mixing bowl, beat cream cheese and powdered sweetener until fluffy, then add the egg, lemon juice, and vanilla extract, mixing until smooth.
  4. Spoon the cheesecake filling into the muffin liners evenly.
  5. Add a ½ teaspoon of raspberry sauce on top of each filling and swirl with a toothpick.
  6. Bake for 10 to 15 minutes until puffed and slightly jiggly in the center.
  7. Cool at room temperature, then chill in the refrigerator for at least an hour until firm.
  8. Serve with a dollop of sugar-free whipped cream and a fresh raspberry on top.
