Instructions
- Preheat the oven to 350°F (177°C) and line a mini muffin pan with 24 parchment liners.
- In a small saucepan, heat raspberries, water, and powdered sweetener over low heat until the raspberries soften, then mash and simmer until thickened.
- In a mixing bowl, beat cream cheese and powdered sweetener until fluffy, then add the egg, lemon juice, and vanilla extract, mixing until smooth.
- Spoon the cheesecake filling into the muffin liners evenly.
- Add a ½ teaspoon of raspberry sauce on top of each filling and swirl with a toothpick.
- Bake for 10 to 15 minutes until puffed and slightly jiggly in the center.
- Cool at room temperature, then chill in the refrigerator for at least an hour until firm.
- Serve with a dollop of sugar-free whipped cream and a fresh raspberry on top.
