Chocolate Chip Banana Bread Bites

Ingredients

  • 2 medium very ripe bananas
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 pinch sea salt
  • 2 Tbsp flaxseed
  • 1 tsp vanilla extract
  • 2 Tbsp almond butter
  • 2 Tbsp agave nectar or maple syrup
  • 2 Tbsp extra virgin olive oil
  • 1 cup whole-wheat pastry flour
  • ¾ cup rolled oats
  • ½ cup semisweet dairy-free chocolate chips or chopped dark chocolate
  • to taste Turbinado sugar for topping (optional)

Instructions

  1. 1. Mash the bananas in a large bowl and mix in the baking soda, baking powder, salt, flaxseed, vanilla extract, almond butter, agave nectar, and olive oil until well combined.
  2. 2. Stir in the whole wheat pastry flour and rolled oats until the mixture is wet and sticky, adding more oats if it appears runny.
  3. 3. Fold in most of the chocolate chips and refrigerate the batter for 20 minutes while preheating the oven to 375°F (190°C).
  4. 4. Scoop rounded tablespoons of the batter onto a lined baking sheet, spacing them about an inch apart, and press down slightly.
  5. 5. Sprinkle with additional chocolate chips and/or turbinado sugar if desired.
  6. 6. Bake for 10-11 minutes until set, then let cool slightly on a rack before serving.
