  • 1 pound fresh beets

Instructions

  1. Bring a medium saucepan filled with water to a boil.
  2. Chop the greens off the beets if attached, leaving about half an inch.
  3. Scrub the beets thoroughly to remove any dirt.
  4. Carefully add the beets to the boiling water and boil for 30-35 minutes until fork tender.
  5. Drain the beets and transfer them to an ice bath to cool.
  6. Peel the skins off and cut off the tops and roots.
  7. Slice, dice, or shred the beets as desired.
  8. Spread the beet pieces on a baking tray and freeze for 4 hours.
  9. Transfer the frozen beets to freezer bags, removing as much air as possible.
