Ingredients

The batter

  • 3 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • ¼ cup old-fashioned oats
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • 1 ¼ cups milk
  • ¾ cup plain Greek yogurt
  • cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract

For serving

  • to taste Maple syrup or honey

Instructions

  1. Melt the butter and set it aside.
  2. In a large bowl, combine the flours, oats, baking powder, baking soda, and cinnamon.
  3. In another bowl, mix the milk, yogurt, honey, eggs, and vanilla until smooth.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Gently fold in the melted butter.
  6. Preheat and grease the waffle iron.
  7. Pour the batter into the waffle iron and cook until golden and set.
  8. Serve warm with maple syrup or honey.
