Fluffy Honey Oat Dinner Rolls

Instructions
- Combine oats, honey, butter, and salt in a stand mixer bowl.
- Add boiling water and mix until combined; let cool for 15-20 minutes.
- Stir in yeast and 2 cups of flour; mix until combined.
- Gradually add remaining flour until a soft, tacky dough forms.
- Knead the dough for 4-5 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise until doubled (1 to 1.5 hours).
- Punch down the dough and divide into 12 pieces, shaping each into a ball.
- Grease a baking pan and place rolls in it; cover and let rise until puffy (about 1 hour).
- Preheat oven to 350°F and bake rolls for 20-25 minutes until golden.
- Brush with melted butter if desired.
