Fluffy Honey Oat Dinner Rolls

Ingredients

The dough

  • 2 cups quick cooking oats
  • cup honey
  • 4 tablespoons butter
  • 2 ½ teaspoons salt
  • 2 ½ cups boiling water
  • 1 ½ tablespoons instant yeast
  • 4 to 5 cups all-purpose flour

For brushing

  • as needed none melted butter

Instructions

  1. Combine oats, honey, butter, and salt in a stand mixer bowl.
  2. Add boiling water and mix until combined; let cool for 15-20 minutes.
  3. Stir in yeast and 2 cups of flour; mix until combined.
  4. Gradually add remaining flour until a soft, tacky dough forms.
  5. Knead the dough for 4-5 minutes until smooth and elastic.
  6. Place dough in a greased bowl, cover, and let rise until doubled (1 to 1.5 hours).
  7. Punch down the dough and divide into 12 pieces, shaping each into a ball.
  8. Grease a baking pan and place rolls in it; cover and let rise until puffy (about 1 hour).
  9. Preheat oven to 350°F and bake rolls for 20-25 minutes until golden.
  10. Brush with melted butter if desired.
