Moist Chocolate Chip Skillet Brownies

Ingredients

  • 1 15 oz can black beans, no salt added, drained and rinsed
  • 3 large eggs
  • 3 Tbsp plain Greek yogurt
  • ¼ cup unsweetened cocoa powder
  • ¾ cup coconut sugar, or other sweetener
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • a pinch salt
  • ¼ cup chocolate chips
  • to taste white chocolate drizzle (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In a food processor, pulse the black beans until mashed.
  3. Add the eggs, Greek yogurt, cocoa powder, coconut sugar, vanilla extract, baking powder, and salt to the beans and process until smooth.
  4. Mix in the chocolate chips and pour the brownie mixture into a greased skillet or an 8x8 baking pan.
  5. Bake for 30 to 35 minutes, until a toothpick inserted comes out clean.
  6. For decoration, after cooling, pipe melted white chocolate in a spider web pattern on top of the brownies.
