Ingredients

The brownie batter

  • 1 cup chocolate chips
  • ¼ cup coconut oil
  • ¾ cup coconut sugar
  • 2 eggs
  • 1 cup almond flour
  • ¼ cup cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt

Optional topping

  • ½ cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and grease a 6-inch cast iron skillet or an 8x8 pan.
  2. 2. In a small bowl, melt the chocolate chips and coconut oil together in the microwave in 30-second increments until fully melted, then set aside to cool.
  3. 3. In a large mixing bowl, combine the almond flour, cocoa powder, baking powder, and salt, stirring until mixed.
  4. 4. Whisk the eggs and coconut sugar into the melted chocolate mixture.
  5. 5. Pour the chocolate mixture into the dry ingredients and mix until well combined.
  6. 6. Pour the batter into the skillet and top with additional chocolate chips if desired.
  7. 7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
