Instructions
- Preheat the oven to 350ºF and prepare a 9-inch square baking dish with parchment paper.
- In a large bowl, mix the ground flax or chia seeds with water to create a vegan 'egg'.
- Add pumpkin puree, coconut sugar, melted coconut oil, gluten-free flour, cacao powder, salt, baking soda, and apple cider vinegar to the bowl and mix until smooth.
- If the batter is too thick, add an additional tablespoon of water.
- Fold in the dark chocolate chips, then transfer the batter to the prepared baking dish and spread it evenly.
- Bake for 30 to 35 minutes until the center is set.
- Let the brownies cool in the pan for at least 30 minutes before slicing into 16 squares.
