Brussels Sprouts With Bacon and Apples

Ingredients

The vegetables

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 small onion, chopped
  • 2 medium tart apples, diced (Pink Ladies or Granny Smith)
  • ¼ cup chopped parsley

The proteins and fats

  • 4 slices organic bacon
  • 1 tbsp organic butter

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Cook the bacon in the microwave for about four minutes until crispy.
  2. Melt butter in a large sauté pan and cook the chopped onion with a pinch of salt until translucent.
  3. Steam the Brussels sprouts in a steamer basket for 8 to 10 minutes until tender.
  4. Add the diced apples to the sautéed onions and cook for another 4 to 5 minutes until the apples are slightly tender and have brown edges.
  5. Combine the cooked Brussels sprouts with the onion and apple mixture, and season with salt and pepper.
  6. Crumble the cooked bacon over the top and toss with chopped parsley before serving.
