Three-Seed Crackers

Instructions
- Preheat the oven to 350ºF and prepare an 8-loaf mini loaf pan with nonstick spray.
- In a large bowl, whisk together the flour, baking soda, and salt.
- Add the almonds, raisins, flax, sesame seeds, and pepitas, and toss to combine.
- Stir in the buttermilk, maple syrup, and brown sugar until well mixed.
- Divide the batter into the prepared loaf pan and bake for 25 minutes until firm.
- Cool the loaves for 15 minutes, then remove from the pan and let cool completely.
- Freeze the loaves for at least 3 hours.
- Slice the loaves into thin 1/16-inch slices, aiming for about 30 slices per loaf.
- Bake the slices at 300ºF for 15 minutes, flip them, and bake for an additional 10 minutes until dark golden.
- Allow the crackers to cool completely before storing.
