Ingredients

The batter

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon kosher salt
  • 2 cups buttermilk
  • ¼ cup maple syrup
  • ¼ cup brown sugar

The mix-ins

  • ½ cup whole unblanched almonds or sliced almonds
  • 1 cup golden raisins
  • 4 tablespoons ground flax seed or whole flax seed
  • 4 tablespoons sesame seeds
  • 4 tablespoons pepita seeds
  • to taste Maldon salt for sprinkling

Instructions

  1. Preheat the oven to 350ºF and prepare an 8-loaf mini loaf pan with nonstick spray.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. Add the almonds, raisins, flax, sesame seeds, and pepitas, and toss to combine.
  4. Stir in the buttermilk, maple syrup, and brown sugar until well mixed.
  5. Divide the batter into the prepared loaf pan and bake for 25 minutes until firm.
  6. Cool the loaves for 15 minutes, then remove from the pan and let cool completely.
  7. Freeze the loaves for at least 3 hours.
  8. Slice the loaves into thin 1/16-inch slices, aiming for about 30 slices per loaf.
  9. Bake the slices at 300ºF for 15 minutes, flip them, and bake for an additional 10 minutes until dark golden.
  10. Allow the crackers to cool completely before storing.
