Ingredients

Hawaiian Carne Asada

  • pounds flank steak or skirt steak
  • ½ cup soy sauce
  • ½ cup pineapple juice
  • cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic, minced or grated
  • 1 jalapeno chopped
  • 2 juices juice of limes
  • cup juice of orange
  • cup sesame oil

Pineapple Pico De Gallo

  • ½ large pineapple
  • 1 cup cherry tomatoes, halved
  • ¼ of a sweet onion finely chopped (optional)
  • 1 jalapeno seeded and chopped
  • ½ cup fresh cilantro, chopped
  • 1 lime juice
  • 1 tablespoon sesame oil
  • pinch salt

Fries

  • 3 pounds russet potatoes, peeled and sliced
  • 3 tablespoons olive oil
  • teaspoons seasoned salt
  • 1 teaspoon pepper
  • 1-2 cups sharp cheddar or swiss cheese, shredded
  • to taste sliced avocado, fresh cilantro, sesame seeds, crema or Greek yogurt, and Cotija cheese for topping

Instructions

  1. Marinate the steak in a mixture of soy sauce, pineapple juice, brown sugar, apple cider vinegar, garlic, jalapeno, lime juice, orange juice, and sesame oil for at least 1 hour.
  2. Grill the pineapple until charred, then dice it and mix with tomatoes, onion, jalapeno, cilantro, lime juice, sesame oil, and salt to make the pico de gallo.
  3. Preheat the oven to 425°F and prepare the fries by cutting potatoes into thin strips, tossing them with olive oil, salt, and pepper, then baking until crispy.
  4. Sear the marinated steak on a hot grill until cooked to your liking, then let it rest and slice thinly.
  5. Assemble the fries by layering them with cheese, sliced steak, and toppings like pico de gallo, avocado, and cilantro.
