Peanut Butter Granola Apple Rings

For the cinnamon-pecan granola

pecans, finely chopped

maple syrup

coconut oil, melted

ground cinnamon

mini chocolate chips
Instructions
- Preheat the oven to 325°F.
- In a large bowl, mix together the oats, pecans, maple syrup, coconut oil, and cinnamon until combined.
- Spread the granola mixture onto a large sheet pan lined with parchment paper.
- Bake the granola for 25 to 30 minutes, stirring halfway through, until golden brown.
- Let the granola cool completely on the pan and add mini chocolate chips if desired.
- Slice each apple into 4 even slices and make a hole in the center of each slice.
- Heat the peanut butter in a microwave-safe bowl until smooth and drippy.
- Drizzle the peanut butter over each apple slice and top with crunchy granola.
