Ingredients

The apple rings

  • 2 apples apples, cored and sliced into 8 rings
  • ¼ cup all-natural peanut butter
  • 1 cup cinnamon-pecan granola

For the cinnamon-pecan granola

  • 1 cup rolled oats
  • ½ cup pecans, finely chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil, melted
  • ½ teaspoon ground cinnamon
  • optional mini chocolate chips

Instructions

  1. Preheat the oven to 325°F.
  2. In a large bowl, mix together the oats, pecans, maple syrup, coconut oil, and cinnamon until combined.
  3. Spread the granola mixture onto a large sheet pan lined with parchment paper.
  4. Bake the granola for 25 to 30 minutes, stirring halfway through, until golden brown.
  5. Let the granola cool completely on the pan and add mini chocolate chips if desired.
  6. Slice each apple into 4 even slices and make a hole in the center of each slice.
  7. Heat the peanut butter in a microwave-safe bowl until smooth and drippy.
  8. Drizzle the peanut butter over each apple slice and top with crunchy granola.
