Ingredients

  • 2 cups Almond Flour
  • 2 cups Cheddar cheese (shredded)
  • 2 tsp Italian seasoning
  • 2 tsp Baking powder
  • 1 lb Ground pork sausage
  • 8 oz Cream cheese (at room temperature, cut into small chunks)
  • 2 cloves Garlic (minced; optional)

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with foil, greasing it well.
  2. In a large bowl, combine almond flour, shredded cheddar, Italian seasoning, and baking powder.
  3. Add the sausage, cream cheese, and minced garlic, mixing until just combined without over-mixing.
  4. Use a small cookie scoop to form 1-inch balls and place them onto the prepared baking sheet.
  5. Bake for 8 minutes, then twist the balls to reduce sticking.
  6. Continue baking for another 7-8 minutes until just barely cooked through.
  7. Broil for 2 minutes to brown the sausage balls.
