Chunky Tzatziki Sauce

Ingredients

  • 3 pieces Lebanese cucumbers, seeded and diced
  • 1 tsp salt
  • 1 cup plain Greek yogurt
  • ½ piece lemon (zest and juice)
  • 4 cloves garlic, minced
  • ½ tsp freshly cracked black pepper
  • ½ tsp Himalayan salt
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp fresh mint, finely chopped
  • 1 tbsp dried oregano or za'atar

Instructions

  1. Peel and seed the cucumbers, then dice them into ¼ inch cubes.
  2. Sprinkle the chopped cucumber with salt and let it drain in a sieve with a weight on top for about 30 minutes.
  3. In a mixing bowl, combine yogurt, lemon zest and juice, garlic, black pepper, salt, parsley, mint, and oregano or za'atar. Stir to combine.
  4. After the cucumbers have drained, add them to the yogurt mixture and stir well.
  5. Refrigerate for about an hour before serving to enhance the flavors.
