Chunky Tzatziki Sauce

Instructions
- Peel and seed the cucumbers, then dice them into ¼ inch cubes.
- Sprinkle the chopped cucumber with salt and let it drain in a sieve with a weight on top for about 30 minutes.
- In a mixing bowl, combine yogurt, lemon zest and juice, garlic, black pepper, salt, parsley, mint, and oregano or za'atar. Stir to combine.
- After the cucumbers have drained, add them to the yogurt mixture and stir well.
- Refrigerate for about an hour before serving to enhance the flavors.
