Tzatziki Sauce

Ingredients

  • 1 unit Persian cucumber or ½ English cucumber, peeled and seeded
  • 1 cup plain coconut yogurt
  • 2 tablespoons minced fresh mint leaves or dill
  • 1 small clove garlic, minced
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons lemon juice
  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Peel the cucumber and scoop out the seeds.
  2. Grate the cucumber or finely dice it, then squeeze out the excess liquid using a clean dish towel.
  3. In a medium bowl, mix together the coconut yogurt, mint (or dill), garlic, 2 tablespoons of extra virgin olive oil, and lemon juice.
  4. Add the diced cucumbers to the mixture and stir well.
  5. Season with salt and pepper to taste.
  6. Drizzle the remaining tablespoon of extra virgin olive oil on top before serving.
