Small Batch Sherry Vinaigrette

Ingredients

  • 1.5 Tbsp sherry vinegar (aged)
  • 1 Tbsp minced shallots
  • ½ tsp pressed garlic
  • ¼ tsp oregano (fresh or dried)
  • 1 tsp dijon mustard
  • 1 pinch granulated sugar
  • 3 Tbsp olive oil (highest quality)

Instructions

  1. Combine shallots, garlic, oregano, and sherry vinegar in a small bowl and let sit for 20 minutes.
  2. Whisk in the dijon mustard and sugar.
  3. Slowly drizzle in the olive oil while continuously whisking to achieve a creamy consistency.
  4. Chill for up to two hours before serving, or serve immediately if needed.
