Instructions
- Combine shallots, garlic, oregano, and sherry vinegar in a small bowl and let sit for 20 minutes.
- Whisk in the dijon mustard and sugar.
- Slowly drizzle in the olive oil while continuously whisking to achieve a creamy consistency.
- Chill for up to two hours before serving, or serve immediately if needed.
