Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water
  • ¾ cup water
  • 3 tablespoons chia seeds
  • 2 tablespoons virgin coconut oil or olive oil
  • ¾ teaspoon fine sea salt

Instructions

  1. Rinse and drain the quinoa, then cook it in 2 cups of water until fluffy.
  2. Preheat the oven to 350°F (180°C) and prepare baking sheets with parchment paper.
  3. Mix chia seeds, oil, and salt into the cooked quinoa, then add the remaining water and cool slightly.
  4. Process the mixture in a food processor until it is mostly broken down but still textured.
  5. Scoop 1/4-cup mounds of dough onto the baking sheet and flatten them into 5-inch rounds.
  6. Bake for 20 to 23 minutes until the edges are firm, then transfer to a cooling rack.
  7. Add desired toppings and enjoy.
