3-Ingredient Chia and Quinoa Flatbread

Instructions
- Rinse and drain the quinoa, then cook it in 2 cups of water until fluffy.
- Preheat the oven to 350°F (180°C) and prepare baking sheets with parchment paper.
- Mix chia seeds, oil, and salt into the cooked quinoa, then add the remaining water and cool slightly.
- Process the mixture in a food processor until it is mostly broken down but still textured.
- Scoop 1/4-cup mounds of dough onto the baking sheet and flatten them into 5-inch rounds.
- Bake for 20 to 23 minutes until the edges are firm, then transfer to a cooling rack.
- Add desired toppings and enjoy.
