Ingredients

  • 2 cups light spelt flour
  • 2 tablespoons light spelt flour
  • ½ teaspoon fine grain sea salt
  • ½ teaspoon baking soda
  • ¾ cup almost boiling water
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Whisk together the flour, salt, and baking soda in a large bowl.
  2. Stir in the hot water and olive oil until a shaggy dough forms.
  3. Knead the dough about 15 times, adding flour if it's too wet.
  4. Shape the dough into a ball and cover it with a tea towel.
  5. Preheat a large skillet over medium heat.
  6. Take a chunk of dough slightly larger than a golf ball and shape it into a ball, dusting with spelt flour.
  7. Roll the dough thinly on a floured surface, using a rolling pin.
  8. Drizzle olive oil on the rolled dough and spread it evenly.
  9. Cook the tortilla in the skillet for about 30 seconds on each side.
  10. Cover cooked tortillas with a tea towel to keep them warm and soft.
  11. Store leftovers in the fridge covered with a damp paper towel.
