Instructions
- Whisk together the flour, salt, and baking soda in a large bowl.
- Stir in the hot water and olive oil until a shaggy dough forms.
- Knead the dough about 15 times, adding flour if it's too wet.
- Shape the dough into a ball and cover it with a tea towel.
- Preheat a large skillet over medium heat.
- Take a chunk of dough slightly larger than a golf ball and shape it into a ball, dusting with spelt flour.
- Roll the dough thinly on a floured surface, using a rolling pin.
- Drizzle olive oil on the rolled dough and spread it evenly.
- Cook the tortilla in the skillet for about 30 seconds on each side.
- Cover cooked tortillas with a tea towel to keep them warm and soft.
- Store leftovers in the fridge covered with a damp paper towel.
