Homemade Organic Spelt Tortillas

Instructions
- Preheat a skillet on medium-high heat and mix all ingredients in a bowl.
- Cover the mixture and let it sit in a warm place for 20 minutes.
- Divide the dough into 8 equal parts and let them sit covered for another 20 minutes.
- Roll each ball into a 6- or 7-inch circle.
- Cook each tortilla in the skillet until bubbles form, then flip and cook until lightly browned.
- Repeat for the remaining tortillas and store with wet paper towels in between.
