Ingredients

  • ¼ cup water

Instructions

  1. Soak the cashews for at least 2 hours, then drain and rinse them.
  2. In a high-speed blender, combine the soaked cashews, lemon juice, apple cider vinegar, salt, and water.
  3. Blend on high until silky smooth, scraping down the sides as needed.
  4. Add more water if necessary to achieve the desired consistency.
  5. Transfer the sour cream to a sealed container and store in the fridge.
