Ingredients

The potatoes

  • 2 large red potatoes
  • 2 large purple potatoes
  • 1 drizzle cooking oil or veggie broth

The seasoning

  • 2 teaspoons maple syrup
  • 1 cup hemp seeds
  • 1 cup almond meal
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon Himalayan pink salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the potatoes into round chip-like pieces.
  3. Soak the potato pieces in water for 1-2 hours to remove starch (optional).
  4. Dry the potato pieces thoroughly.
  5. In a bowl, mix the potatoes with oil (if using) and maple syrup to coat.
  6. In a food processor, blend hemp seeds, almond meal, nutritional yeast, garlic powder, and salt until mixed and powdered.
  7. Place the potato rounds on a parchment-lined baking sheet and sprinkle with the Hemp Almond Parmesan mixture on both sides.
  8. Bake for 35-45 minutes until golden brown.
