Ingredients

The corn

  • 4 ears corn

The seasoning

  • ½ teaspoon sea salt
  • 3 tablespoons butter
  • 1 tablespoon minced garlic
  • 3 springs fresh thyme

For serving

  • to taste butter
  • to taste flaky sea salt
  • to taste thyme
  • to taste parsley
  • to taste crushed red pepper flakes
  • to taste scallions

Instructions

  1. Preheat the water bath to 183°F.
  2. Remove husks and silks from the corn, rinse, and dry. Sprinkle with salt.
  3. Arrange corn in a single layer in a cooking bag.
  4. Slice the butter and add it to the bag along with garlic and thyme.
  5. Vacuum seal the bag or use the water displacement method to seal it.
  6. Place the bag in the water bath, weighing it down if necessary.
  7. Cook for 30 minutes to 1 hour.
  8. Carefully cut the bag open and use tongs to remove the corn. Serve with extra butter, flaky salt, thyme, and crushed red pepper flakes.
