Berry Beer Baked Beans

Ingredients

  • 2 cups dried cranberry, borlotti, or pinto beans
  • 1 splash extra virgin olive oil
  • 1 medium red onion, chopped
  • 1/4 cup molasses
  • 1 tablespoon Dijon-style mustard
  • 1 teaspoon crushed red pepper flakes
  • 3 cups berry beer
  • 1/2 cup dried berries and/or cherries, loosely chopped
  • 2 cups light vegetable broth
  • 1/2 teaspoon smoked paprika
  • to taste none fine-grain sea salt

Instructions

  1. Preheat the oven to 350°F and place the rack in the lower third.
  2. In a large oven-proof casserole, heat the olive oil and sauté the red onion for a minute.
  3. Stir in the molasses, mustard, red pepper flakes, beans, beer, dried berries, and broth.
  4. Bring to a simmer, cover, and place in the oven for 1½ to 2 hours, checking every 25 minutes until the beans are tender.
  5. If the beans need more liquid, add broth or water ½ cup at a time.
  6. If the cooking broth is too thin, bring the pot to a boil on the stovetop until thickened.
  7. Stir in the smoked paprika and add salt to taste.
