Cheesy Mashed Potatoes with Bacon and Broccoli

Ingredients

The potatoes

  • 3 pounds red potatoes
  • 6 cloves garlic

The mix-ins

  • 8 ounces bacon
  • 2 cups chopped broccoli
  • 1 cup milk
  • 2 tablespoons butter
  • 1 teaspoon sea salt
  • 1 teaspoon fresh ground black pepper
  • ½ cup sour cream
  • 6 ounces cheddar cheese
  • ¼ cup chopped chives

Instructions

  1. Place the potatoes and garlic in a saucepan, cover with water, and salt well. Bring to a boil, then reduce heat and simmer until tender.
  2. Drain the potatoes and return them to the pan.
  3. While the potatoes are cooking, steam the broccoli for 5 minutes.
  4. When the potatoes are nearly done, bring the milk to a simmer and add the butter until melted.
  5. Pour the milk mixture over the warm potatoes, add salt and pepper, and mash with a potato masher.
  6. Stir in the cooked bacon, steamed broccoli, sour cream, 4 ounces of cheese, and chives until well combined.
  7. Top with the remaining cheese.
