Power Salad with Lemon Chia Seed Dressing

The Lemon Chia Seed Dressing

olive oil

fresh lemon juice

golden or white balsamic vinegar

honey or agave nectar

chia seeds

Instructions
- Combine spinach, roasted sweet potatoes, quinoa, chickpeas, almonds, apples, red cabbage, and avocado in a large bowl.
- In a small bowl or jar, whisk together olive oil, lemon juice, balsamic vinegar, honey or agave, and chia seeds until well combined. Season with salt and pepper to taste.
- Drizzle the dressing over the salad and toss well to coat. Serve immediately.
