Ingredients

  • 1 pound Medjool dates, pitted
  • 3 cups boiled water

Instructions

  1. Soak the dates in boiling water for 15 minutes until very soft.
  2. Bring the dates and water to a boil on the stovetop.
  3. Reduce heat and simmer for 15 minutes, mashing the dates every 5 minutes until the mixture resembles loose applesauce.
  4. Remove from heat and let cool for 15 minutes.
  5. Strain the mixture through cheesecloth or a nut milk bag, squeezing to extract as much liquid as possible.
  6. Return the extracted liquid to the pot, bring to a boil, then simmer for 20 to 30 minutes until thickened.
  7. Allow the syrup to cool before using or storing.
