Instructions
Soak the dates in a large bowl covered with purified water for 2 hours or up to 2 days in the fridge.
For a quicker version, use 1 cup of boiling hot water instead.
Once softened, place dates and soaking water into a high-powered blender or food processor.
For a thicker paste, discard a few tablespoons of the soaking water before blending.
Process until very smooth, scraping down the sides as needed.
Store the date paste in an airtight container in the fridge for up to 4 weeks or freeze for up to a year.
