Smoked Parmesan Crisps

Instructions
- Preheat your smoker to 400 degrees.
- Grate the parmesan cheese and combine it with cracked pepper and thyme in a bowl.
- Prepare a sheet pan with parchment paper or use a cupcake pan, ensuring to coat it with nonstick spray.
- If using cedar planks in the oven, soak them for 30 minutes, then spray with oil and dust lightly with flour.
- Place about 1 tbsp. of the cheese mixture on the prepared surface, spacing them 2 inches apart.
- Bake for 10 minutes or until golden, watching closely to prevent burning.
- Remove the crisps from the pan and store them on a paper towel in an airtight container.
