Swiss Chard Mehari Zushi

Ingredients

  • 325 g Swiss Chard
  • 5 g salt
  • ½ tsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp mirin
  • ½ tsp sugar
  • 2 g Konbu Kelp
  • 2 cups uncooked rice
  • 1 tbsp white sesame seeds

Instructions

  1. Wash and parboil the Swiss chard, then separate the stems and leaves.
  2. Mix salt, soy sauce, vinegar, mirin, sugar, and Konbu in a plastic bag with the Swiss chard.
  3. Rub the mixture onto the Swiss chard and let it pickle for at least 7-8 hours or overnight.
  4. Cook the rice according to your rice cooker instructions and let it cool.
  5. Chop the pickled Swiss chard stems finely and mix them with the cooked rice and sesame seeds.
  6. Form the mixture into 6 rice balls and wrap them with the pickled Swiss chard leaves.
  7. Brush the wrapped rice balls with a mixture of soy sauce and sesame oil, and sprinkle with sesame seeds.
