Instructions
- Heat vegetable oil in a small saucepan over medium heat and cook red curry paste until fragrant.
- Transfer the curry paste to a bowl and let it cool.
- Mix yogurt, lime juice, honey, and salt into the cooled curry paste.
- Add chopped red onion, celery, gherkins, shredded chicken, and cilantro to the dressing and mix well.
- Arrange lettuce leaves on plates and scoop chicken salad onto each leaf.
- Top with chopped peanuts.
