Red Curry Chicken Salad

Ingredients

The dressing

  • 1 Tbsp. vegetable oil
  • 3 Tbsp. red curry paste
  • 1 cup plain whole-milk yogurt
  • 3 Tbsp. fresh lime juice
  • 2 tsp. honey
  • ½ tsp. Diamond Crystal kosher salt
  • ¼ tsp. Morton kosher salt

The salad

  • ½ medium red onion
  • 1 stalk celery
  • 6 pieces sweet gherkins
  • 2 cups shredded rotisserie chicken with skin
  • cup finely chopped cilantro
  • 2 heads Little Gem lettuce or romaine hearts
  • cup coarsely chopped salted roasted peanuts

Instructions

  1. Heat vegetable oil in a small saucepan over medium heat and cook red curry paste until fragrant.
  2. Transfer the curry paste to a bowl and let it cool.
  3. Mix yogurt, lime juice, honey, and salt into the cooled curry paste.
  4. Add chopped red onion, celery, gherkins, shredded chicken, and cilantro to the dressing and mix well.
  5. Arrange lettuce leaves on plates and scoop chicken salad onto each leaf.
  6. Top with chopped peanuts.
