Butternut Breakfast Meatballs

Ingredients

  • ½ butternut squash (approx. 3-4 cups)
  • 1 cup mushrooms (about 4 oz)
  • ½ onion
  • 2 lbs ground breakfast sausage
  • 1 sprig rosemary, diced finely
  • 1 tsp smoked paprika
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 375°F and line a large baking sheet with parchment paper.
  2. Cut the butternut squash into large cubes and chop it into small bits using a food processor.
  3. Chop the onion and mushrooms into bits and add them to the bowl with the squash.
  4. Add the sausage, rosemary, paprika, and cinnamon to the bowl and mix everything together with your hands.
  5. Form the mixture into golf ball-sized meatballs and place them on the lined baking sheet.
  6. Bake in the oven for 40 minutes.
  7. Remove from the oven, allow to cool for a few minutes, and serve.
