Bacon & Breakfast Sausage Meatballs

Ingredients

The meat mixture

  • 8 slices bacon, diced
  • lb ground breakfast sausage

The vegetables

  • ½ onion diced
  • 10 mushrooms diced
  • 1 large parsnip, shredded
  • 8 leaves fresh sage, finely diced

Instructions

  1. Cook the diced bacon in a skillet until crispy, then remove and let cool on a paper towel.
  2. Place the ground sausage in a mixing bowl.
  3. Chop, grate, or food process the onion, mushrooms, and parsnip, then add them to the bowl with the sausage.
  4. Add the cooked bacon and sage to the mixing bowl and combine all ingredients.
  5. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  6. Form the mixture into meatballs and place them on the prepared baking sheet.
  7. Bake the meatballs in the oven for 35-40 minutes.
  8. Serve and enjoy with your choice of sides.
