Instructions
- Pulse bacon and shallots in a food processor until ground into a coarse paste.
- Combine bacon and shallots with the remaining meatball ingredients in a large mixing bowl.
- Mix until evenly combined and shape into 1 ½ inch balls using damp hands.
- Melt butter in a large skillet over medium heat and brown the meatballs on all sides for about 12 minutes.
- Remove meatballs and set aside, leaving about 1 Tbsp of fat in the pan.
- Mix all barbecue sauce ingredients in a bowl and pour into the skillet.
- Bring sauce to a boil, then reduce heat and simmer for 5 minutes.
- Add meatballs back into the skillet and simmer for an additional 15 minutes, adding water if the sauce thickens too much.
