Ingredients

Bacon Meatballs

  • 9 oz bacon, roughly chopped
  • 2 shallots roughly chopped
  • 9 oz ground pork
  • 9 oz ground beef
  • 1 large egg
  • ¼ cup almond flour
  • ¼ cup chopped parsley
  • 2 Tbsp ground flax seed
  • ½ tsp sea salt
  • ¼ tsp garlic powder
  • 1 Tbsp butter ghee or avocado oil

Bourbon Barbecue Sauce

  • ½ cup water
  • 5 oz tomato paste
  • 3 Tbsp maple syrup
  • 3 Tbsp bourbon
  • 1 tsp Worcestershire sauce
  • 1 tsp blackstrap molasses
  • ½ tsp sea salt
  • ¼ tsp garlic powder
  • ¼ tsp smoked paprika

Instructions

  1. Pulse bacon and shallots in a food processor until ground into a coarse paste.
  2. Combine bacon and shallots with the remaining meatball ingredients in a large mixing bowl.
  3. Mix until evenly combined and shape into 1 ½ inch balls using damp hands.
  4. Melt butter in a large skillet over medium heat and brown the meatballs on all sides for about 12 minutes.
  5. Remove meatballs and set aside, leaving about 1 Tbsp of fat in the pan.
  6. Mix all barbecue sauce ingredients in a bowl and pour into the skillet.
  7. Bring sauce to a boil, then reduce heat and simmer for 5 minutes.
  8. Add meatballs back into the skillet and simmer for an additional 15 minutes, adding water if the sauce thickens too much.
