Ingredients

For the bread

  • 1 package Wholesome Yum Keto Bread Mix
  • 6 tbsp Unsalted butter
  • 4 large Eggs
  • ¾ cup Unsweetened almond milk

For the BLT

  • 16 slices Bacon
  • 16 leaves Lettuce
  • 4 medium Roma tomatoes (sliced ¼-inch thick)
  • 1 cup Mayonnaise

Instructions

  1. Preheat the oven and line a loaf pan with parchment paper.
  2. Cream the butter until pale and fluffy.
  3. Add room temperature eggs and almond milk to the creamed butter.
  4. Gradually mix in the Keto Bread Mix.
  5. Transfer the batter to the loaf pan and smooth the top.
  6. Bake until the bread rises and is golden.
  7. Let the bread cool completely before slicing into ½ inch slices.
  8. Spread mayonnaise on two slices of bread.
  9. On one slice, layer bacon, tomato slices, and lettuce, then top with another slice of bacon and the second slice of bread.
  10. Repeat to make desired sandwiches and cut each in half for serving.
