Ingredients

The base

  • 3 cups raw sunflower seeds
  • ¼ tsp sea salt

The seeds

  • 1 Tbsp chia seeds
  • 1 Tbsp flaxseed meal
  • 1 Tbsp shelled hemp seeds
  • 1 Tbsp roasted unsalted pumpkin seeds

Optional sweetener

  • 1-2 tsp coconut sugar or stevia

Instructions

  1. If using raw sunflower seeds, preheat the oven to 350°F (176°C) and spread the seeds on a baking sheet to roast for 10-15 minutes until fragrant and lightly golden.
  2. Transfer the roasted sunflower seeds to a food processor or high-speed blender and blend for about 5-7 minutes until a butter forms, scraping down the sides as needed.
  3. Add the salt, chia seeds, flaxseed meal, hemp seeds, and pumpkin seeds to the blended sunflower butter and pulse to combine.
  4. Taste and adjust the flavor by adding more salt or sweetener if desired, avoiding liquid sweeteners.
  5. Store the sunflower butter at room temperature for 1-2 weeks or in the refrigerator for up to 1 month.
