Ingredients

The base

  • 12 ounces hulled sunflower seeds (unsalted; raw or dry roasted)

The seasoning

  • ¾ teaspoon fine sea salt
  • ¼ cup granulated sugar (optional)

Instructions

  1. Preheat the oven to 350ºF and spread the sunflower seeds on a baking sheet.
  2. Roast the seeds for 8 to 10 minutes until fragrant and slightly oily.
  3. Let the seeds cool for at least 10 minutes.
  4. Transfer the warm seeds to a food processor and process for 2 minutes, scraping down the sides as needed.
  5. Continue processing until the seeds form a thick paste, which may take about 5 more minutes.
  6. Process until the sunflower seed butter is drippy and smooth, adding salt and sugar to taste.
  7. Transfer the butter to a glass jar and let it cool before sealing.
