Sunflower Seed Butter

hulled sunflower seeds (unsalted; raw or dry roasted)

Instructions
- Preheat the oven to 350ºF and spread the sunflower seeds on a baking sheet.
- Roast the seeds for 8 to 10 minutes until fragrant and slightly oily.
- Let the seeds cool for at least 10 minutes.
- Transfer the warm seeds to a food processor and process for 2 minutes, scraping down the sides as needed.
- Continue processing until the seeds form a thick paste, which may take about 5 more minutes.
- Process until the sunflower seed butter is drippy and smooth, adding salt and sugar to taste.
- Transfer the butter to a glass jar and let it cool before sealing.
