Ingredients

The cookie dough

  • ½ cup unsalted butter, softened to room temperature
  • ½ cup granulated sugar
  • ½ cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour (spooned & leveled)
  • cup natural unsweetened cocoa powder
  • 1 teaspoon baking soda
  • teaspoon salt
  • 1 Tablespoon milk (any kind, dairy or non)

The toppings

  • ¾ cup finely chopped pecans
  • to taste homemade salted caramel

Instructions

  1. Chill the cookie dough for at least 3 hours, preferably overnight.
  2. Beat the butter, granulated sugar, and brown sugar together until fluffy.
  3. Add the egg and vanilla extract, and mix until combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until combined.
  6. Add milk to the dough and mix until sticky.
  7. Let the dough sit at room temperature for 10-20 minutes before scooping.
  8. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  9. Scoop and roll the dough into balls, then roll in chopped pecans.
  10. Bake for 11-12 minutes until edges are set and centers are soft.
  11. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  12. Drizzle with salted caramel before serving.
