Basil Hummus

Ingredients

  • 2 tablespoons pine nuts
  • 1 cup fresh basil leaves
  • 1 can chickpeas (15.5 oz), drained and rinsed
  • ½ cup plain nonfat Greek yogurt
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • 1 clove garlic

Instructions

  1. Toast the pine nuts in a dry skillet over medium heat until golden, stirring regularly to prevent burning.
  2. Combine all ingredients, including the toasted pine nuts, in a food processor.
  3. Process the mixture for 2-3 minutes until smooth, stopping to scrape down the sides as necessary.
